WIC WIC WIC

I feel like I must have gotten something last week but I'm not sure.

Tonight I am doing loads of cooking to use up things and make things I can eat all week.  I'm making yogurt in the crock pot, homemade sweetened condensed milk, and will be making those little scrambled eggs in muffin cups mixed with bacon, peppers, and cheese in a little bit.

Tomorrow I'm going to make brown rice pudding, and cream of chicken soup to use as a base for casseroles and stuff.  Right now I have two chicken carcasses boiling away in the stock pot for the chicken part of the cream of chicken soup.

I went to the store tonight to get a dozen eggs, two gallons of milk, a pound of swiss cheese, a pound of cheddar cheese, and a pound of brown rice.  I still have the last of the baby food to get, and two more regular food checks.  And my $18 of produce.  I think we are going to go to the Farmer's market, maybe tomorrow, to use those up.

If my buttermilk hasn't spoiled I'm making another Kentucky Butter Cake.  I'm also baking bread tonight, which uses up another 4 cups of milk.  The cake will use up 4 eggs.

I may start seeing if I can get by for myself with only eating WIC food with just a few extra things...but I'm not sure if I'll keep that up.  I feel like aside from the eggs and the cheese, it is just way too many carbs.  But, of course, it's hard to tell when I'm eating things like cake and bread!  It's not like I'm being very serious about doing low carb.

More WIC shopping and baking; creepy part of creepy domestic

I made another one of those Kentucky Butter cakes, to use up eggs.  I also made zucchini muffins, which used up eggs and zucchini.  They are terrific.   It is this recipe, only I didn't put in nutmeg.  I added a bit of allspice instead.  Maybe 1/2 tsp.  My mom doesn't like nutmeg and she loves zucchini muffins.  I also didn't use raisins, and put in pecans instead of walnuts.

This blog really hasn't ever been very creepy.  I am in the process of decorating Helen's nursery and it is nicely creepy.  Also since Halloween is slowly approaching, I'm starting to get prepared for that.  At some point I'll post photos of the things I am working on, but right now I don't have things uploaded into my computer.

Last night I went grocery shopping.  My WIC purchases: 1 gallon of fat-free milk  (this was at Publix and I'm experimenting to see if their fat-free milk foams the way that Kroger's does), 1 lb of split peas, a loaf of Pepperidge Farm very thin whole wheat bread, a pound of sliced cheddar, and a dozen eggs.

Helen has eaten a few more jars of baby food but I still have a ton of the stuff.  She likes everything when it is mixed with custard, but she doesn't seem as  fond of the peaches as she did of the pears and the apple/blueberry.

WIC shopping and cooking and baking...

So I got my 43 jars of baby food today (11 meat and 32 fruits and vegetables), 3 gallons and one quart of milk, 3 boxes of Chex mix (one corn and 2 rice), 6 cans of tuna in vegetable oil, and a bottle of Spicy V-8 juice (Kroger brand so not really V-8).  

I baked bread and I forgot to add salt, so it is rather bland tasting which is too bad because it looks lovely and the texture is really good.  This used up 4 cups of milk.

I also made yogurt, which used up another 4 cups of milk.  I still have a ton of milk.

And I made a casserole with all the refried beans, 12 of the corn tortillas, and my peppers.  Oh, and a fair amount of cheese.

Anyway, here is taco casserole recipe:
Preheat oven to 350.

Layer 6 corn tortillas on bottom of 9X13 pan.  Spread refried beans on top, and then sprinkle with chopped bell peppers and a can of Rotel tomatoes.  Then add some grated cheese.  Then layer another set of 6 corn tortillas.  Top with ground beef taco mix and leftover ratatouille (this was about 2 cups of ratatouille and there wasn't a lot of meat either but it covered the top.  Cover with more grated cheese and bake for 30 minutes.

WIC tacos!!!!

Okay, so I made WIC tacos and they were really good.

I actually made ground beef with taco seasoning and tomato sauce, but these would be good with just WIC items so I'm going to post that recipe.

WIC Tacos

Refried beans (recipe below)
Small corn tortillas
Tomato
Bell pepper
(Any other WIC produce you would like)
Monterey Jack cheese

Heat up your tortillas and put a layer of refried beans on them.  Top with the vegetables and then grate some cheese on top.  Enjoy!


Refried beans:
Cooked pinto beans with bean cooking water
1 jar of ham baby food (this is optional and only if you have it...I recommend trying it because it did add some nice flavor to the beans and since they already don't look appetizing it's not like it can make them look any worse!)
bacon grease, butter, or whatever fat you want.  I used a combination of bacon grease and butter.

Heat up the fat and let it melt.  Add the beans and mash them up, and add the jar of ham.  Add as much bean water as you want.  Mine ended up kind of soupy but if you keep on cooking them, they are better.

WIC recipes and inventory

I have made pinto beans and ratatouille.  I really only did the pinto beans so I can make refried beans but they aren't bad.  They're not super exciting but they tasted pretty good.  I soaked them overnight and then rinsed them off and put them in a big pot, covering them with an inch of water.  I added a small onion and two cloves of garlic and simmered the beans for 2 hours.  After they were done cooking I added salt.

The ratatouille is one of my standards.  I sliced and salted the eggplant and I always put the salted slices in between paper towels for awhile.  Then I chop up an onion and saute it in oil until it's translucent.  Then dice the eggplant and add it and a TON of olive oil to the pot.  Let it cook for about 10 minutes, then add a can of diced tomatoes.   This would be a 28 ounce can, and I like the fire roasted ones.  Cut up two medium sized zucchini and add them to the pot.  Add some salt and a healthy slug of red wine and just let it simmer until everything looks done.  I let it cook on low for a long time today and it turned out really well.

Out of my WIC purchases I've used up a dozen eggs (making cakes and something else I don't recall), the pinto beans, the eggplant and 2 zucchini. 2 peaches, half a pepper, half a jar of baby sweet potatoes, a jar of applesauce, and I think 2.5 gallons of milk.  Oh, and two corn tortillas and a few slices of bread.  And some peanut butter.  And both boxes of cereal.  The baby just isn't very interested in the food right now, and the only way she wants to eat it is mixed up with custard.
